coconut rice

 

  • 3 cups cooked rice
  • 1 can coconut milk
  • 1/2 tsp vanilla
  • 1/3 cup sugar
  • 3/4 cup water

Combine rice, coconut milk, vanilla, sugar and water in a saucepan over medium heat and cook, stirring occassionally, for 8 minutes, or until the sugar is dissolved and the rice mixture is slightly thickened.   Remove from heat and refrigerate until cold.   Here I’ve pumped up the kicks with a seared mango cheek.

  1. OH YOU!!!! Why did i read this when i’m hungry?! Now i REALLY want to make it!! but i only have brown rice and well i think this will really need white rice..hmmm
